"I use a citric acid & sugar bath to dip mango slices prior to dehydrating them. It improves colour & flavour, extends shelf life and gives the mango a great tangy taste. I also use a citric acid solution to clean the copper scrubbies and plates in my Still. . . . Fun Fact - just like alcohol is produced by fermenting sugar with yeast, commercial citric acid is produced by fermenting sugar with a specific species of mold called Aspergillus Niger. This process is far more cost effective and efficient than juicing and refining millions of lemons."
